Pumpkin Chocolate Vanilla Protein Cookies

HAPPY HALLOWE'EN to you!

It's pumpkin season! And I've got a protein, fiber and fat-powered cookie for you!

These Pumpkin Chocolate Vanilla Protein Cookies are MY kind of Hallowe'en candy!

Why?

Because they not only taste incredible in the moment, you continue to feel awesome in the moments and hours afterward! WIN!

Having some delicious homemade baking on hand when the conventional treats are FLOWING at particular times of year, means I never feel deprived of celebrating, too!

Baking options that incorporate our 3 macros (protein, fiber and fat) sit so well and fuel us SO DIFFERENTLY than high-sugar, conventional baking options.

This recipe is just that!

Protein: SMOOVâ„¢'s Vanilla Cream protein powder, eggs, and a touch of protein in the mixed nut/seed butter

Fiber: organic pumpkin purée, mixed nut/seed butter

Fat: eggs, coconut oil, mixed nut/seed butter

And, not overly sweet either! I rely on minimal amounts of sweetness in my baking because a little bit goes a long way, and so many recipes out there could do with a small fraction of what they note, if at all.

When protein and fat drive a recipe, like this one, the satiation factor is AMPLIFIED, as protein and fat take far longer to digest than carbohydrate sugars.

This means you feel fuller, satiated and content, for LONGER. YES!
