Kelp Noodle Bowl w/ Spicy Ginger Dressing
Mmm! One of my FAVOURITE lunch/dinner ideas!
Kelp noodles are a fantastic alternative to your typical pasta noodle or rice noodle - a low-carb, low-calorie, naturally gluten-free/grain-free option with a glassy appearance! They have a neutral taste, taking on the flavour of the ingredients they happen to be combined with.
You can find them through a few different online distributors, such as through Canada's Natura Market.
If not wanting to try out kelp noodles, rice noodles or grain-free konjac noodles are fantastic alternatives!
Like konjac noodles, kelp noodles do NOT need to be cooked – they’re ready to go!
Place the noodles in a colander and throughly wash and drain them. As they'll appear to be a bit of a tangled mess, work through the noodles a bit with your hands. I prefer to chop them into shorter noodles with a pair of clean scissors, so they're easier to eat!
